Ozone Levels

Can all foods be exposed to ozone during a processing application? What are optimum levels for storage? How does ozone acutally improve storage life?

I have heard that ozone levels as low at 0.05 PPM can keep produce fresh? This seems way to low. That much ozone is present outside at times. Help me out here. :shock:

Although we are not an ozone company we provide plasma block corona discharge technology in numerous cold storage applications. There doesn’t seem to be a magic number but we consistently see .5 to 2 ppm. I seriously doubt .05 or .1 will have any effect at all. Then again I am no expert in this field. I can only go by what our customers tells us and we hear this all of the time. Much of this has to do with ethylene levels, temperature and humidity, type of produce, length of storage, cubic feet of storage and so on. The plasma block can easily produce 50,000 ppm. Yes that is what I said 50,000 ppm at the discharge of the ozone line. We mix this with the circulation fans which very efficiently move the ozone and air throughout the facility. Obviously no humans are in the area. Estimated concentration levels once the ozone and air are mixed are about 1 ppm based on 8000 cubic foot of storage for 1g/hr of ozone produced. A 300,000 cubic foot storage facility would need 37.5 g/hr plasma block generator. I hope this answers your question.
